Living in Colorado, this would HUGELY increase my carbon footprint. A vegetarian diet simply cannot be a low-carbon diet in a region that cannot grow many vegetables. The only low-carbon diet in CO is to eat dried fruit & veg most of the year, and to eat locally raised, pasture-fed meat, and local fish. In a few parts of the world, a vegetarian diet can be very harmful environmentally. Not to mention how eating soy destroys Amazonian rainforests!
